Salted Caramel and Dark Chocolate Fudge Cake {No Gluten No Sugar}


Okay, so first of all I just wanna apologize for not turning up last Sunday!

I have been so effing busy all damn week! I honestly cannot believe that Sunday has arrived already!


So now that I am back, lemme actually talk about what i have been upto this week!

I had college! Yeah, unfortunately, I have to attend college religiously and practically SLEEP through the lecture!

I mean, I have no clue why, but I really thought studying mass media would be fun!

Turns out IT IS NOT!

Someone please get me my fly swatter, I have a mosquito to kill!

I have two real amazing friends in my class. Trust me, I have no clue what I would’ve done without them. By now I’d be deffo sitting in my room swatting mosquitoes all day long. Yes… I AM SERIOUS! I would have taken a drop! Hands down!

besides, I am really excited about something that I am gonna soon take up!

Being the jobless girl that I am, I was experimenting with macarons this week. I am not the kinda girl who’d spend her entire allowance on almond flour. i mean seriously, how much does almond flour cost anyway?

Umm…helloooo??? Do we even get it in supermarkets here in India?


I wasn’t gonna break a sweat over this. I needed to find another alternative!

And I did! Here’s the pink lemonade macaron with the secret ingredient.

I am gonna soon start taking orders for baking! YEP,,,!!!

You know what? If you walk into an Indian patisserie you will not find too many varieties to begin with. They are delish, don’t get me wrong. But you know, I really wanna introduce Navi Mumbaikars to something with a more gourmet edge.

So I have been looking up the net all week for some cute packaging ideas!

Salted Caramel and Dark Chocolate Fudge Cake {No Gluten No Sugar}

This rich eggless chocolate cake coated with decadent dark chocolate fudge frosting and filled with salted caramel sauce is 100 % gluten free and contains no sugar.


For the sponge:

150 gms Gluten free mix

(For this, sift together 1 cup rajgira flour, 1 cup jowar flour, 3/4th cup arrowroot flour and 1 tsp dink flour)

150 gms jaggery

175 gms butter

1 tbsp coffee powder mixed in 1 tsp warm water

50 gms cocoa powder

50 gms thick yogurt

1 tsp almond extract

1 tsp salt

2 tbsp thick cream.

1 tbsp baking powder

For the No-Sugar caramel: {For the detailed step-by-step .gifs Click Here}

50 gms honey

50 gms jiggery

100 mls cream

1 tsp salt

1 tsp vanilla

50 gms butter

For the Fudge frosting:

50 gms jaggery

50 mls cream

40 mils milk

1 tbsp honey

50 gms butter

100 gms dark chocolate


Preheat oven at 180 degrees Celsius.

For the sponge, cream jaggery and butter till light and fluffy, add yogurt, almond extract, coffe mix, sift in the gluten free mix and cocoa powder, salt and mix well. Add cream till mixture is liquid but not too runny.

Place in 3 greased cake pans and bake at 180 degrees for about 15-20 minutes or until a toothpick inserted in the centre comes out clean.

Make the salted caramel sauce. Add the honey and jaggery in a saucepan and mix till melted, add the cream and salt. Let it come to a boil. Take it off the heat and add butter. Stir well till it melts, then add the vanilla extract. Keep it aside.

Make the fudge frosting.

Mix melted dark chocolate and butter and cream. Place it on very low heat and the rest of the ingredients. Do not boil. Cook on very low heat for about5 minutes.

Take it off the heat.

Assemble the cake.

Take a layer, slather it with the cooled caramel sauce, add another layer, place a thick dollop of the fudge frosting and top it with the final layer. Use the remaining frosting to coat the cake. And top with dark choco chips (optional)

Salted caramel and dark chocolate fudge cake is ready!

Okay now my stomach’s rumbling and I need food!
