Orange Butter Coconut Cinnamon Scones


I had a dream last night.


Who am I kidding!?

It was sort of a nightmare, really.

Okay, so here goes.

I’m walking into a theatre with {I guess} a friend ‘cause I can’t recollect the face now but I remember seeing a hand! No, I know how ridiculous this sounds to not remember the face but seeing a hand but that is ‘cause the hand {supposedly my friend} was holding a tub of caramel popcorn, which by the way, is my FAVORUITE flavour of popcorn on the PLANET!

So, there I am, late for my movie {as always} and before I can even get to my seat, I reach out for the popcorn, you know ‘cause I’m always so hungry and attracted to food more than I am to people. So I pick a handful of popcorn and somehow the whole tub just tumbles to the floor. I STILL DO NOT KNOW HOW THAT HAPPENED!

And as I am reliving this dream now, it makes me wonder what if it was some stranger’s popcorn I was diving into?


So yeah, I don’t know what went wrong and why I was feeling so desperate but I found myself kneeling on the carpeted floor of the theatre trying to get the popcorn from the floor and into my mouth. INTO MY MOUTH! What am I, insane???? But somehow it kept disappearing and I never really got the caramel popcorn!!!!

And then I woke up!

Think the universe is giving me a hint????

So, anyways, I’ve wanted to make these beauties {read Orange Butter Coconut Cinnamon Scones} for a long time now! I have never attempted scones before and was always intrigued when I used to watch people bake these delicious scrummy goods on TV. So I decided to give it a try. And I am so glad I did, because I am in LOVE with how this tastes.

It’s got so much happening in it but I promise you, the effort will be well worth it!

So, the first part is pretty self explanatory! I made orange butter and froze it till it got really chilled and used this as to rub it along with the dry ingredients to make a rough dough!

Now, you must be thinking where the hell did the coconut go? It’s there in the scones. Right there!!!!

The scones need a little liquid to bind them together, so I used coconut milk. TADA!!!!!!!!!!

Then just before I put them in the oven, I glazed it with coconut milk and a beaten egg and topped with some cinnamon sugar…. and what’d you get?

Orange Butter, Cinnamon and Coconut Scones


    For the Orange Butter:
  1. 100 gms butter
  2. Juice of 2 large oranges
  3. Zest of 1 orange
  4. 2 tbsp sugar
  5. For the Scones:
  6. 200 gms flour
  7. 1 tbsp sugar
  8. 1 tsp salt
  9. 1 tsp cinnamon
  10. 60 gms Orange butter chilled
  11. 1 egg
  12. 140 mls coconut milk
  13. For the glaze:
  14. A mix of coconut milk and egg
  15. Sprinkle of cinnamon sugar


    For the Orange Butter:
  1. Pour the juice and zest of orange in a saucepan.
  2. Add the sugar and cook till the juice thickens up and gets jammy.
  3. Whisk the softened butter until light and fluffy {about 1-2 mins}
  4. Add the thick jammy orange syrup into the butter and whisk for another 3 minutes until well combined.
  5. Wrap in a cling film and refrigerate until it hardens.
  6. For the Scones:
  7. Preheat oven to 220 degrees C
  8. Mix all the dry ingredients together.
  9. Cut the chilled orange butter into cubes and rub it into the dry ingredients until crumbly and resembling bread crumbs.
  10. Add the egg and the coconut milk and combine together. Do not knead just bring it together till it forms a rough dough and flatten it out slightly. Cut rounds using a cutter dipped in flour. You can even cut it like you cut a pizza {like those cutesy triangles}. Your choice!
  11. Place on a baking tray that has been lined with baking parchment.
  12. Bake for 15-17 minutes.
  13. Slit from the centre when ready.
  14. Slather with some more orange butter and enjoy with your morning or evening tea.

  6. Samina, i was compelled by this post because in ireland scones play a very large role in our diet! I love how your version have such a twist, not only with the orange flavour, but the addition of coconut milk. That’s something i never would have thought of, and it’s such a fantastic idea – i’m sure it gives the scones great moistness and sweetness.
