Honey and Herb Bread

honey-and-herb-bread-slices-cupcake-confession I’ll be heading to my new college in a couple of hours from now to pay my fees and officially begin another year of studies! This should be fun!

I’m upto no good other than that.

That leaves me with plenty of time to bake {and EAT}, read all my favourite food blogs and watch horror movies all day long!

I’m somehow just SO OBSESSED with Horror flicks for some reason! honey-and-herb-bread-whole-cupcake-confession I mean, I sound insane!

I know that when I have to pee in the middle of the night, I’m going to have the TOUGHEST time walking to the bathroom, closing the door and hoping that there are no spirits or a psycho killer lurking behind my back!

But I still watch it!

Even when I have to dive head first into my bed and cover up with a blanket in the hopes of not being pulled away by the evil spirit!

It’s crazy! I plan to watch Carrie now, probably tomorrow!

Any other recent horror movies you’d like to suggest that I can watch and then spend sleepless nights looking for weird shadows on the wall and ceiling? 😛

For now, let’s talk about this bread!

I got the idea for this beauty after I read this Salted Honey Butter buns {}post on Tieghan’s blog!

I loveddddd how that glaze made the buns sing and I really wanted to try it myself, albeit with a little twist.

I made a loaf of bread with fragrant Italian herbs and finely chopped garlic embedded like tiny jewels in the dough. honey-and-herb-bread-whole-top-cupcake-confession I truly think that garlic and mixed herbs is a match made in heaven!!!!!!

And then you brush on some melted butter, honey and mixed herbs on the bread before it goes in the oven to do its thing and once when it gets out of the oven… glaze-honey-and-herb-bread-the-cupcake-confession OMG! Pure heaven, I tell you!

And that is why; I’ve shared a recipe which makes two loaves, so you can have one and give the other to the sniffing neighbour! honey-and-herb-bread-slices-long-view-the-cupcake-confession Or maybe, you could just keep both to yourself and give the neighbour a bear hug! Hahaha!

You can use this bread for a sandwich {recipe coming up }, you could slice it like how I’ve shown in the photos or you could go lengthways and give Subway a run for their money!

Don’t get me wrong, I LOVE SUBWAY! I’m just saying that this honey and herb bread is just so good, you can make your own sandwich at home with your choice of veggies, grilled meat or any other protein and some quick dressing! honey-and-herb-bread-slices-close-up-the-cupcake-confession Or you know, you could just have it with your soup! Whatever you like, NO PRESSURE !!!! Just, you know, saying! 

Honey and Herb Bread


    For the bread
  1. 360 gms all purpose flour
  2. 100 gms wholewheat flour
  3. 2 tsp sea salt
  4. 1 tbsp + 1 tsp active dry yeast
  5. 2 tsp sugar
  6. 1 tbsp honey
  7. 6 large cloves of garlic
  8. 2 tsp dry mixed herbs
  9. 3 ½ tbsp butter // ghee
  10. 120 ml + 200 ml lukewarm water
  11. For the glaze:
  12. 1 tbsp melted butter // ghee
  13. 1 tbsp honey
  14. 2-3 tsp of mixed dried herbs


  1. In a bowl, add the yeast and sugar and 120 ml of lukewarm water and put it aside for about 10-15 minutes till it gets creamy.
  2. In a large clean metal bowl, sift the flour and add the salt and mix well so that the flours combine well.
  3. Once creamy, add the yeast to the flour by making a well in the centre.
  4. Add the remaining 200 ml lukewarm water in small instalments kneading well.
  5. The dough is going to be STICKY, so don’t be alarmed.
  6. Once it has been kneaded well, you add the melted butter or ghee and knead for another 7-9 minutes until it gets nice and soft.
  7. Add the honey and mixed herbs and knead for another 2 minutes and place it in a lightly oiled and floured bowl and seal it shut with a cling film and let it rest for about 1 – 1 ½ hours.
  8. It will grow into double its size.
  9. Gently take the dough out and give it a good knead and cut it into half.
  10. Shape the dough and place boat loaves on a baking sheet and cover with a damp cloth to prove for another 1 hour.
  11. After one hour, brush the tops with the honey, butter and herb mix.
  12. Preheat the oven to 230 degrees C and pop it in for about 30 minutes.
  13. It may take longer depending on your ovens. The best way to check is to tap the base of the bread, which should sound hollow.
  14. Once it’s out of the oven, while still hot, brush the leftover honey, butter and herb glaze.

  1. Carrie is scary!! I hope you are watching the original one with sissy spacek in it. Its freaky. I’m so over horror flicks – I can’t deal with it anymore.

    This bread looks awesome – agree garlic and herbs are just magic. I have yet to venture into bread making. I’m so tempted. But a full time job and a 3 yr old means I have zero time – or atleast feels like it.

    I have to say that I am no fan of scary movies. I just can’t stop screaming. My family always suggest a scary movie just so they can laugh at me being scared.

    I definitely approve of this bread, though. It looks like it came out perfectly. Love the idea of glazing with honey – I think you would definitely give Subway a run for their money with this one!

  6. I love horror films too, even though I always scare myself. I’d have to say my favorite one is Halloween, such a classic movie! And this bread looks amazing! I love the spices in there. Anything with garlic is perfect in my book!
